Super fast and simple salmon recipe with an Asian-inspired sauce!
Ingredients:
2 eight oz. salmon fillets, sprinkled lightly and evenly with salt
(Sauce)
½ cup water
3 tbsp soy sauce
1 tbsp honey
¼ teaspoon sesame oil
¼ teaspoon salt
1 tsp cornstarch mixed w/ a bit of water
4 tbsp finely julienned ginger
2 tbsp minced garlic
3 scallions, very thinly julienned into 2-inch pieces
A handful of cilantro, chopped
Toasted peanuts
Directions:
(Prep) Rub salmon with olive oil and sprinkle salt on both sides.
(Cook) Place salmon in the air fryer skin side down at 390 for a total of 10 minutes. At the 5 minute mark, flip the salmon so it lays skin side up. (see Notes for alternative cooking method)
(Sauce) Heat a small saucepan over high heat with a 1/4 tsp sesame oil. Mince the garlic and thinly slice the ginger (into very thin matchstick shapes). Slice the scallions/ green onions into smaller ~2 in. pieces. Then, keep slicing each tube vertically until you have matchstick-like pieces that are similar in size as the ginger.
Mix the water, soy sauce, and honey together. Make a cornstarch slurry with 1 tsp cornstarch and a dash of water (just enough to dissolve it).
Add the garlic and ginger to the pan and fry for 2 minutes, or until aromatic. Add the soy sauce mixture and let it bubble away to reduce for a minute. Then add the cornstarch slurry and keep stirring until the sauce thickens. Turn off the stove, mix in the sliced scallions and let it sit for a few minutes with you prepare the garnishes.
(Garnish) Chop some cilantro and toast some chopped peanuts. Add the salmon to the plate with sides of your choice (rice and broccoli/ carrots for example), add the sauce mixture on top and garnish with cilantro and toasted peanuts!
NOTES:
If you don’t have an air fryer, you can pan-fry the salmon or bake it in the oven.
(large skillet, 4 min on one side and 3 min on the other side)
(450 degree oven, 12-15 minutes)
If cooking salmon in an air fryer, I would start checking on it after 7 minutes or so, as the cooking time really depends.
For any non-Food Network watchers, a great kitchen hack is to peel ginger with a spoon!
When you add the sauce, make sure the ginger/ scallion matchsticks all line up in the same direction for presentation purposes.
I used to marinate the salmon before cooking it, but just focusing on the sauce saves a lot of time and effort and the end result tastes just as good!
