I believe the day you figure out how to make salads you enjoy is a transformative life event.
My thought process:
- Base (romaine or green leaf lettuce are my favorite)
- Protein to make it filling (sweet potato, tofu, chicken, shrimp, soft-boiled egg)
- Veggies to add variety (cucumber, tomato, CORN)
- Sweet surprise (apple, peach, strawberries, mandarin oranges, dried cranberries)
- Fun crunchy bits (croutons, nuts like almond slivers, pine nuts, toasted walnuts, wonton strips, parmesan crisps)
- solid salad dressing (my go to is a homemade sesame-soy vinagrette I always keep stocked in the fridge!)
- avocado can save almost any salad
Ingredients:
- Sweet potato (diced, tossed with olive oil and salt, baked in a 425 degree oven for 15-20 minutes)
- romaine lettuce
- honeycrisp apple
- cucumber (I used a vegetable peeler to remove some of the skin that can be a bit tough/bitter. Persian cucumbers also work well!)
- tomato
- parmesan crisp (this one is from the store, but you can make your own by making a pile of grated parmesan cheese on parchment paper on a baking sheet, and bake at 425 degrees for 5-10 minutes until crisp!)
- Trader Joe's crossaint croutons (SO GOOD)
