Roasted Garlic, Kale, and Burrata Pizza

Homemade pizza is actually easier to make than you might think! Trader Joe's has great pre-made pizza dough you can get, and making your own version means you can always add your favorite toppings.


Pizza is a perfect poolside meal and it's a great way to enjoy leftover veggies as well!


 

Ingredients:

  • Pre-made pizza dough (you can also make it from scratch pretty easily if you have time)

  • 1 bag of Kale

  • 6 cloves of garlic

  • Handful of cherry tomatoes

  • Corn

  • Grilled onions

  • Burrata cheese (it's a creamy mozzarella cheese, but regular shredded mozzarella also works great!)

  • Tomato sauce

  • Leftover ground turkey (optional)

  • + Your favorite toppings!


 

Directions:

Preheat your oven according to the package directions on the dough (it was 475 F for me) Add a baking sheet into the oven to heat up as well (makes the dough crunchier)


Prepare the veggies (wash the kale, slice the onion, mince the garlic)


Heat a large pan on high heat. Add 1 tbsp butter and onion to the pan. Sprinkle a pinch if salt and sugar onto the onions and cook 7-10 minutes until caramelized. Set the onion side.


Add the garlic into the pan (reserving 1 tbsp to add directly to the pizza) and add the chopped kale after garlic is fragrant. Cook 4-8 min until the kale is wilted.


Pizza assembly time! Set a piece of parchment paper on a stiff cutting board to make the transfer process to the baking sheet easier.


Roll out the dough as thin as you can (it will poof a lot in the oven). Spread a thin layer of tomato sauce and some of all of your toppings. Add all of the kale so it can be protected by the cheese layer and not burn.


Tear the cheese into smaller pieces and lay them all over. Finish the pizza with the rest of the toppings and reserved minced garlic.


When the oven is ready, slide the whole parchment paper + pizza onto the hot baking sheet. Cook according to dough package directions (it was 8-10 minutes for me). Make sure you check on the pizza towards the end of the cooking time to ensure it does not burn.


Enjoy! (Pro tip: right after the pizza comes out if the oven, slide it into a toaster oven rack or cooling rack so it doesn't become soggy as it cools!)
