Chicken Shawarma with Cheesy Mashed Potatoes and Sauteed Kale

Let Trader Joe's do the hard work for you! Their marinated chicken shawarma is super flavorful and quick to bake on a weekday night. Adding potatoes and greens completes a balanced dinner!


Leftover mashed potatoes could be used to make Crispy Loaded Baked Potato Waffles!

(behind the scenes pov is me trying to make sure not to drop my dinner or phone off of my 5th floor balcony hahaha)

 



Ingredients:

- Trader Joe's Marinated Chicken Shawarma (you can find it in the meat section near the chicken thighs

- 3 small red onions


- Cheesy Mashed Potatoes

- 1 large yukon gold potato

- 2 medium japanese sweet potatoes

- 2 tbsp heavy cream

- 1 bunch green onions

- 1/4 cup Trader Joe's cheddar/gruyere mix

- salt, pepper, and garlic powder to taste

(+ bacon would never hurt :))


- Sauteed Kale

- 1 bag chopped kale (you can remove the stems if you find them a bit tough)

- 1/4 lemon

- 3 tbsp chopped garlic

- salt to taste

 

Directions:

Preheat oven to 400 degrees F. (I almost wrote 400 degrees C because I just finished my lab report. I would not recommend setting your oven to 400 C lol)


Line a baking tray with foil and spread out the shawarma chicken thighs. Slice 3 small red onions into half rings and spread them out on the small tray. Mix them with the remaining sauce. Bake for 25-30 minutes, or until the chicken turns opaque all of the way through. I'd recommend flipping each piece halfway through.


While the chicken in baking, dice the potatoes into cubes and cook them in salted boiling water until fork tender (about 15 minutes). Slice the green onion into small pieces. Immediately after you strain the cooked potatoes, mix them together with the green onion so they can cook in the residual heat. Add the heavy cream, salt, pepper, and cheese. Mash potatoes with a fork.


Mince garlic and heat a pan on high with a drizzle of olive oil. Add the garlic and kale and sautee until the kale is bright green. Remove the kale from the heat and squeeze lemon juice over it. Add salt to taste.


Once the chicken is cooked, slice into bite sized pieces and enjoy!
