I came home from volunteering and my first thought was "Waffles sound super great right now". The only problem was it was dinner time and I was supposed to cook for my family, which led to this savory twist on waffles!
They taste like french fries in waffle form and 1) who doesn't like waffles, and 2) you get all of the crispy edges without any frying.
These waffles are extremely versatile (you can dress them up for a full meal or dip in tomato sauce for a satisfying snack) and I created 3 options below! It is almost as simple as making mashed potatoes, so I hope you enjoy!
Ingredients:
(Potato Waffle)
4 medium red potatoes (or any other potatoes)
1 small sweet potato
1 tbsp butter
1 bunch/ package of green onion
1/2 - 1 tsp each of garlic powder, onion powder, paprika, nutritional yeast
*(optional) cooked bacon or shredded cheese (but with all of the flavors and textures, you really don't miss these if you leave them out!)
Directions:
Cut the potatoes into cubes and cook them in boiling water until smooth.
In the meantime, chop the green onion into small pieces and measure out all of the spices in a separate bowl.
Once cooked, drain the potatoes and add them to a large bowl. Add the butter and spices, then mash the potatoes until fairly smooth. Fold in the green onion and adjust seasoning to taste.
(Cook) Heat a waffle iron according to its directions. Once hot, add 1/2 cup - 3/4 cup of the mashed potato mixture.
Cook for 4-8 minutes, until the waffle is golden brown. After it's cooked, let it cool on a cooling rack. (If you are serving a while later, crisp the waffles back up in a 400 degree oven/ air fryer for a few minutes.
Serve with your toppings of choice (my suggestions below) and enjoy!
Option 1: Crispy Potato Waffles w/ Fresh Avocado Salsa
(the fun vegan option)
Ingredients:
- 2 ripe avocados, cut into cubes
- 2 handfuls of cherry tomatoes, sliced
- cilantro
- salt, white pepper, garlic powder
- lemon or lime juice
Directions:
Prep all of the ingredients. Mix everything together so the avocado is slightly mashed and let it sit for a minute for all of the flavors to meld together.
Then it's ready to serve!
Option 2: Crispy Potato Waffles w/ Marinara Sauce
(the lazy but delicious snack option)
Ingredients:
- Marinara sauce
Directions:
Add marinara sauce to a dipping sauce bowl and top it with a basil leaf.
Then you have a hearty snack in minutes!
Option 3: Crispy Potato Waffles w/ Lemon-Pepper Shrimp
(the waffles-can-actually-be-a-full-meal option)
Ingredients:
- Grilled onion & mushrooms
- 1 avocado, cubed
- shrimp
- salt, lemon-pepper seasoning
- squeeze of lemon juice
Directions:
Grill the onions in a large pan until translucent, then add the chopped mushrooms (or use leftover veggies!)
Dice the avocado.
Mix the shrimp with all of the spices (salt & lemon-pepper seasoning) Heat a large pan on high heat until hot. Add a drizzle of oil and dump the shrimp in the pan. Sear the shrimp for 1-3 minutes on the first side until it is cooked. Flip all of the shrimp over and cook until the shrimp is fully pink.
Add the squeeze of lemon juice to the shrimp, plate everything up, and enjoy!
Notes:
- This recipe is extremely versatile, and this is one example of how leftovers don't have to be boring, a little creativity can result in some interesting variations!
- The original recipe only used normal potatoes, but I actually didn't have enough so I threw a small sweet potato into the pot as well, and I really liked how it changed the final color of the waffles!
