Ingredients:
salmon fillet (I cut salmon from Trader Joe's into 3 smaller pieces for the right serving size)
4 garlic cloves, minced
2 tbsp brown sugar
3 tbsp soy sauce
onion, sliced
tomato, sliced into cubes (I used a tomato I got from a farmer's market and it was so good!)
rice/salad (optional)
Directions:
Saute the onion in a bit of butter/ oil until softened. Add the tomato slices and cook on high heat until it starts to caramelize. Set the cooked veggies aside
In a different pan, heat a drizzle of oil on medium heat and add half of the minced garlic cloves. Stir for 1-2 minutes until fragrant. Add the salmon into the pan and wait 2-3 minutes until the bottom is seared and golden brown. Then flip the salmon, add 1/2 cup of water, and quickly cover the pan with a lid (it will probably splash, so be careful!). Steam for 6-10 minutes, depending on the size.
Then, uncover the pan, let the water evaporate, and sear the other side of the salmon. Set the salmon to the side (I like to cut it down the middle to make sure it is flaky and cooked all of the way through.
Add the remaining garlic and saute until fragrant on high heat. Add the brown sugar and soy sauce and stir quickly until the glaze thickens. Add the salmon back into the pan and flip it to coat in the sauce.
Add the grilled onions and tomatoes to the bottom of the plate, add the salmon, and top it with any remaining glaze. Enjoy!
