Super quick way to repurpose leftovers into a satisfying lunch! (also who doesn't love BBQ sauce!)
Ingredients:
1 cup shredded chicken (Costco/ Vons rotisserie chicken work great here)
1/4 cup corn (frozen or canned can go straight into the mix, if using fresh corn, cut the kernels off of the cob and saute for 5-10 minutes until soft)
1 avocado + 1 tsp lemon juice
1/4 cup thinly sliced cabbage
1/4 cup red beans
1/4 cup shredded carrots would be great in this!
mini romaine hearts (these are a bit more tender and great for lettuce wraps, but normal romaine lettuce leaves work as well!)
1/2 cup - 3/4 cup BBQ sauce (amount is up to your preference!) (I like the Sweet Baby Ray's Barbecue Sauce brand!)
Directions:
(Prep) Wash the lettuce leaves and dry them well. Shred the chicken. Slice and avocado into cubes and squeeze some lemon juice on top to prevent browning.
(Combine) Add all of the ingredients into a big mixing bowl and mix together with tongs.
(Serve) Add the BBQ chicken filling onto the lettuce leaves and serve with extra BBQ sauce!
