Souffle Pancakes

Super fluffy pancakes!

Ingredients:

  • 2 eggs

  • 4 tsp milk

  • 4 tbsp flour

  • 1/4 tsp vanilla extract

  • 2 tbsp sugar

  • 1 tbsp butter


Directions:

Separate the egg yolks and whites. Sift the flour over the egg yolks and whisk until there are no lumps. Whisk in the milk and vanilla extract.


Beat the egg whites with an electric mixer. Gradually add in the sugar. Stop when stiff peaks form.


Gently fold 1/4 of the egg white mixture into the egg yolk mixture. Fold in the rest of the egg whites.


Add the pancake mixture into a piping bag


Melt the butter in a non-stick pan on low heat. Pipe the batter into tall mounds to form pancakes. Add a tbsp of water to an empty part of the pan and cover with a lid. Cook ~2-4 minutes until the bottoms are golden brown. Pipe a bit more batter on top and gently flip the pancakes over. Add a tbsp of water to an empty part of the pan and cover with a lid. Remove the pancakes once the second side browns.


Serve immediately with maple syrup and your favorite berries.


Tips:

- I would start with 1 test pancake first to practice the timing! Low heat is important because it takes a bit of time for the middle of the pancakes to cook and you don't want the bottom to burn
