Apple Pancakes

Fun twist on traditional pancakes! Perfect for lovers of apple pie and breakfast.

Ingredients:
  • 1 honeycrisp apple

  • 4 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • a pinch of salt

  • 1/2 a mashed banana

  • 2 tbsp greek yogurt or apple sauce + unsweetened 1 tbsp lemon juice

  • 1/2 cup almond milk (may need some extra to adjust the consistency

  • 2 tbsp brown sugar

  • 1-2 tsp butter or coconut oil for greasing


  • sliced banana/ grapes & powdered sugar for garnish


 
Directions:

Wash the apple and slice it into thin rings (see the source recipe video for examples). Use a piping tip or other round object to punch a hole in the center of the slices to remove the seeds. Squeeze a bit of lemon juice on the slices to prevent browning.


Mix together and dry ingredients and combine the wet ingredients in a separate bowl. Pour the wet ingredients into the dry and mix everything together.


Heat a pan on medium high heat and add a bit of butter or coconut oil.


Dip the apple slices into the pancake batter and add them to the pan (try not to crowd the pan too much). Push down slightly on each apple ring to ensure the pancake batter underneath is spread evenly. You can also pour a bit of batter onto the top of the rings.


After a few minutes and once you see bubbles, flip the pancakes over and let them cook for another few minutes (an off-set spatula is very helpful here). Once they are done, transfer them to a cooling rack while you finish the rest of the apple slices.


Serve with fresh fruit and maple syrup if you'd like!
