Elevated Avocado Toast

Here are some simple ways to elevate the classic avocado toast!


1 - use a toasted bagel! The chewy interior of a bagel adds a nice contrast to the toasty outside

2 - add an over-easy egg! This will help keep you full until lunch and a jammy egg yolk center is the best part

3 - sautéed green onion! Green onion + oil is a classic Vietnamese garnish and it goes great with this whole combo

4 - seasonings! With a dish this simple, a few key seasonings can make a huge difference, and remember to season with salt throughout the cooking process


Ingredients:

- 1 everything bagel

- 1 ripe avocado

- 1 egg

- 2 green onions, sliced + 1 tbsp oil


- nutritional yeast

- garlic powder

-"Everything But the Bagel" seasoning from Trader Joe's

- SALT


Directions:

Toast the bagel (air fryer at 400 degrees for 5 minutes works beautifully)


Open the avocado. Remove the seed and set it on the side if you have a sister that wants to have an army of avocado plants.

Sprinkle some salt onto each half and then roughly mash.


Chop the green onion. Add it to a bowl along with oil and a sprinkle of salt. Microwave for 30 seconds, or until green onions are soft and cooked through.


Fry the egg.


Assemble! Bagel -> avocado mash -> green onion garnish -> sprinkle of nutritional yeast & garlic powder -> egg -> garnish with Trader Joe's "Everything But the Bagel" seasoning on top.

Additional Tips:

- avocado storage: It is absolutely the worst when your $1.50 avocado goes bad before you can eat it. The best method that has worked for me is to buy firm avocados so they don't bruise in the store. Leave them out on the counter for 2-3 days, until you can feel them soften. Right before they feel ripe, store them in the fridge to keep them looking green.

(if you put them in the fridge right away, they tend to stay super firm and don't have the right texture, so leaving them out for a few days is important!)


- egg tips: get a small NON-STICK pan. Make sure the pan + a drizzle of oil is hot enough. Using a bigger spatula might help, and don't be afraid to fully scooch the egg onto the spatula before you try to flip it
