Choose your own adventure: tropical and bright or classic comfort?
These two twists on overnight oats will make you excited to start your day and keep you full until lunch!
Ingredients:
Dragonfruit Banana Overnight Oats
1 cup rolled oats
1 cup almond milk
2 tbsp almond butter
1 tsp chia seeds
1/4 cup frozen dragonfruit (they sell this seasonally at Costco!)
(topping) 1/2 banana + a few pieces of dragonfruit
Apple Pie Overnight Oats
1 cup rolled oats
1 cup almond milk
2 tbsp almond butter
1/2 green apple diced finely
2 tbsp raisins
1 tsp flax seeds
1/2 tsp vanilla extract
(apple pie topping)
1/2 green apple diced, 1 tbsp water, 1 tbsp maple syrup
(extra toppings) granola + apple slices
Directions:
Dragonfruit Banana Overnight Oats - Mix all of the ingredients together (except for the toppings) and store in the refrigerator overnight. When you are ready to enjoy, slice the banana, add some extra frozen dragonfruit, and drizzle some extra almond butter!
Apple Pie Overnight Oats
Cut the apple in half. Dice half of the apple and add it to a small saucepan along with 1 tbsp water, 1 tbsp maple syrup and a sprinkle of cinnamon. Cook on medium heat until the apple softens and your kitchen smells like apple pie! (you may need to add some extra water during the cooking process)
Finely dice the other half of the apple. Mix in the rest of the ingredients except for the toppings. Fill your containers with the oats+apple mixture and top each serving with some of the apple pie filling topping.
Store in the refrigerator overnight and add extra toppings before you enjoy!
