Classic Sweet Potato & Bell Pepper Tacos w/ Cashew Lime Cream

Ingredients:

  • (Taco Base)

  • 2 sweet potatoes

  • 2 bell peppers (preferably different colors)

  • *Diced chicken (optional)

  • 1 onion

  • 4 cloves of garlic

  • 3 tbsp tomato paste

  • 1/4 cup chicken broth

  • Paprika, Cumin, Garlic Powder, Onion Powder, Chili Powder (a smidge), Salt, White Pepper (bc it's the best kind)


  • (Additional Toppings)

  • Flour Tortillas

  • Lettuce / Spinach

  • Corn

  • Avocado

  • Tomato

  • Cilantro

  • Roasted Chickpeas

  • Cashew Lime Cream (1/4 cup cashews, a bit less than 1/4 cup boiling water, 1/2 a lime)

 

Directions:

(Prep) Dice the onion, bell peppers, and sweet potato. Mince the garlic.

Coat the sweet potato cubes with a drizzle of olive oil, salt, and paprika.


(Cook) Place the sweet potato into an air fryer set at 400 (or 425 degree oven) for 10-15 minutes until cooked through.


Heat a large pan on high heat with a drizzle of olive oil. Once hot, add the garlic and onion and cook 2-3 minutes until fragrant and the onions are translucent. Add the bell pepper and wait another 3-5 minutes until bell peppers are mostly cooked through.

(add a dash of chicken / vegetable broth if you think things are about to burn)


Add the tomato paste, ~4 tbsp of chicken/ vegetable broth, and a dash of all the spices. Add the cooked sweet potato. Add more tomato paste if you want to thicken the filling or more broth to loosen it a bit. Adjust the spices based on taste.


(Serve) All that's left is to prepare the toppings (slice lettuce, heat up corn, slice avocado, blend together cashew lime cream, etc.) and enjoy!

 

Notes:

  • This recipe is super versatile & you can pretty much add your favorites or whatever you have!

  • I think sweet potatoes make a perfectly hearty and filling base, but there's lots of options:

    • Sweet potato, bell pepper, onion, mushroom, ground beef, diced chicken, tofu, ground turkey

  • Presentation tips: Spoon the cashew cream into a sandwich bag and make a tiny cut in the corner to create a super easy piping bag! (start with a very small cut and adjust from there by testing out the thickness of the line)

  • You can also create a burrito with the filling, add some melty cheese, and toast the burrito on a pan without any oil to create a toasty burrito-pocket!
