Caramelized Chicken

This caramelized chicken is a classic dinner that is super savory and satisfying. The sweet and sticky sauce is definitely a crowd favorite, and this recipe is easy to upscale for a large family!

 

Ingredients:

  • (Marinade)

    • 2 tbs fish sauce for marinade

    • 1 tbs brown sugar for marinade

  • 2.5 lbs chicken thigh/leg


  • (Sauce)

    • 3/4 cup brown sugar

    • 1/3 cup fish sauce

    • 1/3 cup rice vinegar

    • 1/3 cup water

    • 4 cloves of crushed garlic

    • 2 tbsp chopped ginger

    • 2 shallots minced


  • (Garnish)

    • Chopped green onions


  • (Sides)

    • Onion

    • Broccoli/ cauliflower

    • Rice

    • Persian cucumbers / Salad

 

Directions:


(Prep) Cut the chicken thighs into 1 inch cubes. Smaller pieces cook faster, but this recipe also works with larger pieces if that’s what you prefer.

Marinade the chicken with 2 tbs of fish sauce and 1 tbs brown sugar for about 30 minutes.


Make the sauce by combining 3/4 cup brown sugar, 1/3 cup water, 1/3 cup rice vinegar, and 1/3 cup fish sauce and mix until dissolved. Add the ginger, shallots, and garlic.


(Sides) Caramelized onions and steamed broccoli/ cauliflower go great with this dish, so you can prepare whatever veggies you have.


(Cook) Heat a large pan on high with vegetable oil. Add the chicken thighs and cook until mostly done. I usually do two batches, but it will depend on the size of your pan.


Heat another pan on high heat. Add the sauce and let it bubble away until it is reduced and resembles a sticky sauce that isn’t liquidy anymore. Add the partially cooked chicken thighs and mix to coat everything. Keep the pan on high heat until the sauce fully reduces to a thick, caramelized state and then you’re done!


Top with chopped green onions, and serve with rice and sides of your choice. Persian cucumbers or a side salad are a great way to round off the dish with fresh veggies also.

 

NOTES:

  • The sauce won’t look very different at the beginning of the caramelizing process, but it thickens really fast later on, so don’t walk away from the stove!
