Vietnamese Chè

aka Rainbow Coconut Dessert aka Vietnamese Fruit Cocktail. This cool and refreshing Vietnamese Dessert is great for parties and family get-togethers!


(also this is now my favorite mug ever, huge shout-out to our HOPE students :D)

 

Ingredients: (there are so many varieties of chè, but these are the ingredients that are most common in my family!)

- 1 can of coconut milk (high quality is really important for this dessert, and I recommend the Chef's Choice brand

- 1 can of lychee

- 1 can of jackfruit

- 1 can of clear jelly (grass jelly also works)

- 1 apple + a few tablespoons of tapioca flour + red/green food coloring

- shaved ice (ice cubes also work)


optional:

- 1 can of white beans

- (no idea what it is called, but it's like chewy jelly cubes)

- other tapioca-based additions

 

Directions:

Pour the can of coconut milk into a large bowl.

Slice the jackfruit and lychee into strips (you can use a knife or your hands) and add it into the bowl.

Pour half of the can of syrup from the lychee into the bowl of coconut milk. (you can also make your own sugar syrup by dissolving sugar into water over the stove)

Cut the canned jelly into cubes and add it into the bowl.


Boil water and create an ice bath. Peel the apple. Dice the apple into tiny pieces. Add half of the apple slices into a plastic bag and add a few drops of red food coloring. Shake the bag so to distribute the food coloring. Add a few tablespoons of tapioca flour and shake to coat. Pour the apple pieces into the boiling water and wait a few minutes. When the tapioca flour turns clear and the apple pieces float to the top, remove them with a strainer and dump into the ice bath. Repeat with the remaining apple pieces and green food coloring.


Right before you serve, add the apple pieces into the big bowl and stir to combine.


Add ice/ shaved ice into each cup (not into the big bowl, so it doesn't get diluted) and ENJOY!

 

Notes:

- This dessert is best enjoyed right away! Also, if you add the apple pieces too early, then the colors will start to dye the coconut milk.
