Literally my brother's favorite food at family parties. Super simple and quick to make!
Ingredients
Box of chicken stock
4-6 tbsp cornstarch dissolved in 3 tbsp water (to make a cornstarch slurry!)
1 egg
Fish sauce, soy sauce, sugar (to taste, probably about a tablespoon of each)
Crab meat
White asparagus (can be found at 99 Ranch, picture below!)
Quail eggs (I didn't have any, so I used a soft boiled egg
(Toppings)
Extra crab
Pepper/ white pepper
Cilantro
(Boiled cabbage and fried garlic are good too!)
Directions:
Bring the chicken stock to a boil. With a whisk, stir in the cornstarch slurry. If you'd like it a bit thicker consistency, add more cornstarch slurry.
Crack in the egg and quickly whisk to crate the "egg drop soup" look.
Add the fish sauce, soy sauce, and sugar. Add additional seasoning to taste. (May need to add salt depending on the chicken stock you started with).
Slice the asparagus into smaller pieces. Drain the can of quail eggs. Add the asparagus, quail eggs, and lump crab meat to the soup.
Top with cilantro and pepper right before serving. Enjoy!
